Even if I do not select "Remember my password" I do not need to login when publishing from Office

EPiServer will store a per session cookie for a connection to a site, this cookie is not deleted until you reboot your computer. This means that you do not need to re-enter your password even if you restart the Microsoft Office applications.
We will probably change this behavior so that you will need to enter password every time you close a Microsoft Office application instead which is the expected behaviour.
